Dissolve one spoonful of sugar and one yeast in a cup with hot water. Allow the mixture to stand 5′-10 ‘in a warm place until bubbles come to the surface.
In a bowl add the flour, remaining sugar, salt and add the remaining hot water and lemon zest. Pour the yeast mixture into the flour and stir well. Cover the bowl and leave in a warm place 20 minutes.
Once rise the mix of donuts, hit it well. Heat oil in a deep pan. With a wet spoon take small quantities of the mixture and pour carefully into the hot oil. Fry the fritters for 4 minutes or so and put on absorbent kitchen paper.
Prepare the syrup by mixing all the ingredients. Boil for 5 minutes. Serve the dumplings, pour the syrup and sprinkle with cinnamon and walnuts.
